17th century, from Hebrew שָׁחַט (šāḥaṭ). The umlaut possibly spread from the derivative Schächter (“Jewish butcher”), where it may have sprung from analogy with unrelated Schlächter (“butcher”), but a verb form with -a- seems unattested.
